New dining spot, Madison’s Bistro Moderne, with its classy gray interiors is a great setting to celebrate a special occasion, for a long chat with a friend (or your lovey), to have a business dinner, or just the kind of place to go for an excellent meal.
It’s by the same group of Bugsy’s Bar & Bistro. It only officially opened last April but it’s already created a buzz among foodies and those who just reallyreallyreally like to eat. I had dinner last Labor Day there, and I must say, I felt really rewarded for all the hard work I’ve done. Hahaha!
We were served freshly baked artisanal breads as we waited for our chosen dishes. I loved the focaccia, which was crisp outside and chewy inside. Look, Donnie obviously liked the breadstick. :p
The breads came with 2 kinds of flavored butter. One is beet, the other is caviar. Choices of sweet and savory. I liked the beet-flavored butter better. (That was a a bit of a tongue twister, eh?)
We had some Speck and Goat Cheese Mousse with Apple Mustard Chutney and Truffle Scent. This was an excellent starter! The sweetness of the chutney was offset by the speck, and it’s just such a delicious combination. Speck, by the way, is a kind of prosciutto. A bacon cognate, if you must.
The Pistachio Crusted Black Cod Fish with Carrot Pudding and Red Onion-Chocolate Marmalade in Saffron Sauce (650php)… The meat was delicate and the taste was flavorful with flavors that will leave your palate satisfied long after the meal is over. Hehe, or I might be biased because I love pistachio and cod. :D But I think not, because this is one of their bestsellers. :)
The Confit Pork Belly with Potato Gratin, Braised Balsamic Lentils, and Thyme Jus… The meat was amazingly tender and nearly collapsed with each bite. Not a fan of the lentils, but the gratin was nice.
My second favorite specialty cocktail was the Gin Garden (450php), it has gin (Duh.), apple juice, lemon juice, cucumber, and mint. Why is it my favorite? It refreshes while it intoxicates. A perfect summer poison.
Their French Martini (350php) has vodka, raspberry liqueur, pineapple juice, and lavender. Sweet and smooth! Is it true that if a splash of champagne is added, it’s already called a French Kiss?
There’s rum, apple cider, and lemon juice in their Mum’s Apple Pie (300php). This actually smelled like apple pie. I’d rather sniff it than drink it though. :p
And my favorite specialty cocktail– the Elderflower Fashion (380php) has some whisky and elderflower liqueur. This is something I’d drink on any given day.
I also liked watching Madison’s skilled bartender make the Elderflower Fashion. Flame it up! Woohoo!
Moving on… :D They gave complimentary chocolate almond cookies for dessert. Soft, chewy, and delicious! I wonder if they have it for sale, too! Perhaps, I should have checked it in their deli.
The Warm Peanut Butter and Chocolate Fondant with Salt Caramel and Chantilly (250php) was a lovely work of edible art. (Sorry, lousy picture.) And the taste? Phenomenal! Absolutely one of the best desserts I’ve had. Loved the explosion of chocolate and the candied rind on top.
Other must-try signature dishes are their Dry Aged Rib Eye Steak, Tri-color Ravioli, Beef Sliders, Roasted Duck Breast, Roasted Bone Marrow, Foie Gras Ballotine, and Vanilla Panna Cotta with Strawberry Consomme.
They have an extensive drinklist, including Strathisla 1960 (70k/bottle) and Nikka 25 (60k/bottle). Of course, there are also the staples- San Miguel and Johnnie Walker.
Madison’s has a chef’s table that can be booked for private dinners. And just last week, they’ve already started serving breakfast. Now you can enjoy their gourmet food from morning up to 2am!
Ah, Madison’s…. sophisticated without an imposing air of snootiness. I’ve been charmed by this place, and I’m definitely going back to eat all the other recommended standout dishes. I’d like to get some hard to find goodies from their delicatessen next door, too.
