Good Morning Omelette

One of the few things I like about waking up early is I get to make breakfast and enjoy it.

I call this dish Good Morning Omelette simply because it makes me happy when I have it for breakfast. Masarap kasi! Kahit na-overcook, masarap pa rin! And it’s so easy to cook even if I’m still sleepy, I can make this.

The ingredients you need to make a monster-sized eggy brekky are:

(1)
a couple cloves of garlic, minced
1 medium white onion, chopped
1 small red bell pepper, minced
1 small can of button mushrooms, chopped
a dozen black olives, chopped
4 eggs, beaten with a few tablespoons of milk
cheddar cheese, chopped
salt and pepper to taste
butter
extra virgin olive oil

(2) Heat some evoo in a pan, then put some butter. Saute the onions, garlic, and bell peppers. When the onions are wilted, mix in the mushrooms and olives. Season with salt and pepper. Set aside.

(3) Put the beaten eggs into the pan. When it starts forming bubbles, mix in the cheese.

CAUTION: DO NOT NEGLECT PROPER COOKING LIKE I DID. Do not take too many pictures while cooking. You might burn your food or set your kitchen on fire. Also, as much as possible, use a non-stick pan.

(4) Put the filling. If you feel the filling is too much, you can use some of it with pasta. Promise, masarap rin!

(5) Fold the omelette. Do not tear for the sake of Instagram. Hehe.

Serve with toast or any crusty bread, sliced tomatoes and cucumber, and your beverage of choice. Coffee with muscovado sugar for me.

Instead of making a folded omelette, you can just mix the chopped ingredients with the egg and make it a frittata.

Ham, chili peppers, potatoes, or chives can be added, turning this into a better morning omelette!
